We needed a lean, yet flavorful source of protein for our family, Just like so many others.

We would buy a roast, only to end up discarding much of it as fat, or buy a steak that we could afford only to have it full of gristle or tough as shoe leather.

Part of the Problem goes back to how the US Beef Industry evolved.  It appears that after the advent of inexpensive nitrogen fertilizer, corn production soared which created a corn surplus.  Large commercial beef lots became economically feasible, some of the largest holding up to 150,000 cattle, with the cattle averaging less than 200 sq.ft. of room to move around.  In fact beef feedlots were largely non-existent until the 1950's and 60's.  The world is full of smart business people looking to maximize profit in a market where the beef is sold by the pound.  It was soon discovered that if you feed a young steer a diet of processed grains, limit their exercise they get fat really fast,unfortunately, a lot like humans.  Our USDA Grading System evolved to support this process, basically the fatter the better.

​This is why we chose this path, there had to be a better way, for us and our friends, that's why at River Mountain Farms, we have:

A) Heirloom Breeding Stock, Traceable Back to Italy

B) No Growth Hormones or Steroids Ever Used

C) No Systemic Antibiotics, Only Provide if an Animal needs it.  Operate a Closed Herd, all calves born and raised on our farm, so very few illnesses

D) Grass Based Diet with an Open Free Ranging Environment
