Is there a difference in genetics that must be considered?  Let’s present a visual comparison.  Is it possible to have a lean and tender beef?  We think so, as we have discovered the Piedmontese breed.  We have purchased, consumed and had others consume Piedmontese beef.  Every test has been outstanding.  The beef cooks quickly as it is so lean, it also continues to cook after removal from the heat, similar to sea food.  The meat is very, very tender with an outstanding flavor, not fat tasting, but almost rich.  The other interesting part is how leftovers smell when reheated.  Many times with conventional beef when it is reheated it smells of grease, similar to a McDonalds late at night.  This does not have that offensive, old grease smell when reheated, maintaining its clean, full flavor.
